On NE Halsey Street, Floats Magoats blends a wood-fired bakery with a carefully curated grocery — where every loaf is fermented slowly and every shelf item is chosen for its origin, not its margin.

Built on patience
and good ingredients

Floats Magoats started as a weekend stall at the Pearl District Farmers Market — two bakers with a stubborn belief that bread should taste like bread, not like convenience. Five years later, we occupy a corner of NE Halsey where the oven runs from dawn and the grocery shelves carry the same care we put into our dough.

We mill our own flour blends, source dairy from Oregon farms, and stock pantry items from producers we've met in person. If we wouldn't serve it to our neighbors, it doesn't make it onto the shelf.

A bakery first, a grocery second — but both done with the same standard. Everything we bake is made on-site; everything we stock is selected for provenance and taste.

Country Sourdough

18-hour wild-ferment loaf, stone-milled organic flour, thick crackling crust. Our daily standard — nothing else comes close.

Danish-style laminated dough, Oregon cultured butter, 72-hour cold ferment. Flaky, shattering, deeply buttery — baked at 6 AM.

Three things we refuse to compromise on

Time over speed

Our sourdough ferments for 18 hours. Our croissants rest for 72. We'd rather sell out by noon than rush a single batch. Flavor cannot be accelerated.

Provenance over price

Every ingredient on our shelves has a name and a farm. We pay fair prices because the people growing our food deserve them — and because the taste is unmistakable.

Neighbors over scale

We are not trying to be everywhere. We are here, on Halsey, for the people who walk in and want to know what's fresh that morning. That's enough.

Heads up: Our sourdough sells out most mornings by 11. If you're after 2 PM on a weekday, the grocery is still open but the bakery case may be light. Call ahead if you need something special.
